Zoom Cooking Class for Mushroom Paprikash

Zoom requires a few tweaks to make a good presentation such as a recipe that takes less than an hour to prepare. After much study with the old master, George Lang’s The Cuisine of Hungary, and some new experts, I created this recipe for Mushroom Paprikash. The flavors are bold. The dish is hearty as vegetarian or not as suits you.

George Lang says in The Cuisine of Hungary, “The four pillars of Hungarian cooking are gulyas, porkolt, paprikash and tokany….The chief difference between porkolt and paprikas is that paprikas is usually finished with sweet or sour cream…always stirred in just before serving. You may never use cream of any kind for gulyas or porkolt!” The book is a delight to read with history, recipes and plenty of the colorful personality of this American-Hungarian who never lost his passion for Hungary.
